In the heart of Cronulla, Summer Salt has long been cherished for its breathtaking views of sea and sky. Now, with a thoughtful redesign led by brothers Perry and Daniel Drakopoulos of the Sydney Restaurant Group, this beloved venue has transformed into an even more captivating destination. Together, they’ve reimagined the space to channel the calm and grandeur of the endless horizon, creating a dining experience that is both serene and unforgettable.

The Vision

The concept behind Summer Salt’s redesign was simple yet powerful: embrace the essence of the Australian coastline in a way that feels both refined and refreshing. "Summer Salt is synonymous with sea, sky, and seafood," Drakopoulos notes. “With views of that endless blue horizon, we wanted a palette that would let that view—and the atmosphere—speak for itself." This minimalist approach emphasises a singular colour tone and sleek materiality, allowing guests to fully immerse in the beauty of the surroundings while enjoying delicious food, chilled drinks, and a laid-back vibe.

The Heart of the Design

Central to the redesign is the use of our Royal Blue Zellige tiles, exclusively crafted for the structural columns of the restaurant. These 100x100mm tiles shimmer with varying hues of blue, capturing the light throughout the day and creating a visual continuity with the sea beyond. Paired with jodphurs limewash paint above, the Royal Blue tiles create an ethereal atmosphere, inviting diners into a serene, almost otherworldly setting. This elegant touch transforms each column into a bold focal point, embodying Summer Salt’s refined aesthetic.

Craftsmanship and Collaboration

In an uncommon approach, Perry and his brother Daniel Drakopoulos took on the entire renovation themselves, handling the role of project managers and overseeing every detail. With the Sydney Restaurant Group team, they hand-selected each trade professional—from gyprockers to tilers—ensuring that every aspect of the design was executed with precision and care. The result is a venue that feels authentically crafted, where every tile and finish speaks to the dedication of the team involved.

A Space That Echoes the Coast

Completed in August 2024, Summer Salt 2.0 is more than just a restaurant; it’s a welcoming retreat where locals and visitors alike can soak in the beauty of Cronulla’s shoreline. With DJs setting the vibe from Friday through Sunday, it’s the perfect backdrop for celebrating life’s highs or simply enjoying a lazy lunch. Summer Salt’s transformation captures the essence of the Australian coast, blending the serenity of the horizon with the warmth and artistry of handmade materials.
